Abstract

Актуальной проблемой современности является обеспечение населения высококачественными продуктами питания повышенной пищевой и биологической ценности. Обусловлено это нарушением пищевого статуса, нехваткой целого ряда незаменимых факторов питания. В связи с этим все большее значение приобретает концепция создания новых, сбалансированных по химическому составу, обогащенных функциональными компонентами пищевых продуктов и обеспечение их сохранности, безопасности после технологической обработки, а также в процессе хранения.

Актуальною проблемою сьогодення є забезпечення населення високоякісними продуктами харчування підвищеної харчової і біологічної цінності. Обумовлено це порушенням харчового статусу, недостачею цілого ряду незамінних факторів харчування. У зв'язку з цим все більшого значення набуває концепція створення нових, збалансованих за хімічним складом, збагачених функціональними компонентами харчових продуктів і забезпечення їх збереженості, безпечності після технологічної обробки, а також в процесі зберігання.

The current problem of the present is the provision of the population high-quality food products of high nutritional value and biological value. This is due to a violation of the food status, lacking in a number unnecessary nutrition factors. In this regard, it becomes more and more important the concept of creating new, balanced by chemical composition, enriched functional components of food products and their provision safety, safety after machining, and also during storage.
