Abstract

Diplôme : Master Professionnel; il s'agit d'un type de produit dont les métadonnées ne correspondent pas aux métadonnées attendues dans les autres types de produit : DISSERTATION; Over the past few years, the consumption of fresh seafood products stagnated whereas the consumption of processed seafood products increased. It's noted that fresh seafood consumers are aging while young consumers prefer processed products, easy to use or ready to consume. Fresh products do not seem to fulfil the demand intrinsically (aspect, taste, appetence attributes) and extrinsically (method of preparation, use, origin, brand, and priee). To understand the evolution of behaviour, motives and consumers' needs, the programme of research "COGEPECHE" was set up in order to better evaluate these expectations and needs. Within the framework of this program, a qualitative study: means end chain analysis is used to understand the linkages between the attributes that exist in fresh seafood product, the consequences provided by the attributes, and the personal values of consumers. Results of this analysis give an overview of consumer's behaviour and lead to some ways of valorization of fresh seafood product.; Au cours des dernières années, la consommation des produits de la mer frais a connu une stagnation alors que la consommation de produits de la mer transformés a enregistré une augmentation. On constate que les consommateurs des produits de la mer vieillissent alors que les plus jeunes consommateurs préfèrent des produits transformés faciles à utiliser ou prêts à consommer. Ces produits de la mer frais ne répondent pas toujours à la demande tant intrinsèquement (apparence, goût, appétence) qu'extrinsèquement (mode de préparation, usage, origine, marque, prix). Pour comprendre l'évolution des attentes, motivations et besoins des consommateurs, un programme de recherche « COGEPECHE » a été mis en place afin de mieux évaluer ces attentes et besoins. Dans le cadre de ce programme de recherche, une étude qualitative: chaînes moyens fins a été réalisée pour rendre comptes des liens existants entre les attributs des produits de la mer frais, les bénéfices apportés par ceux-ci (conséquences) et les valeurs individuelles des consommateurs. Les résultats de cette étude dresse un bilan du comportement des consommateurs et dégage un certain nombre de pistes de valorisation des produits de la mer frais.
